It “literally” overwrites the old .MP3 with a “NEW”[?] .MP3??? In other words did Podium render a new .MP3, or did Windows somehow do it?

Podium does not render to mp3. If it is overwritten, then your mp3 file is likely now transformed into a wav file, but with an mp3 file extension. Check the file-size, or the file properties in explorer, and you’ll likely see it is now a wav file.
